Sweet Potatoes - Crock Pot Style 


These are seriously the best sweet potatoes I have ever eaten
Simple and Amazing


Ingredients:
 4-6 Medium sweet potatoes sliced (They can be sliced and cooked with the skins on to keep the nutritional content found in the skins and to help hold the potato together during cooking or you may peel them too.)
1/4 Cup sugar 
1 Teaspoon cinnamon
1/2 Teaspoon salt
1-2 Tablespoons butter

Directions:
- Spray the crock pot with Pam or whatever spray you use.  
- Add sliced sweet potatoes  (wash and scrub very well before slicing)
- Sprinkle with salt
- Combine sugar and cinnamon; sprinkle over sweet potatoes
- Dot with butter
- Cook on low for 3 to 4 hours or until they are tender

Summer Fun Freezer Pops 

This is super fun and easy
For this first batch of pops I used sugar free pink lemonade
Cut up some fresh strawberries and pineapple
(you can use any fresh fruits that you like)
Added the fruit to the molds
Then poured in the juice 
Freeze overnight 
and Yum!

(I used the $2.99 freezer pop molds from Target)

To add an adult twist to it
Serve in a wine glass and pour champagne over
What a great refresher to your 
summer cookouts

Southern Living Pound Cake - The Best Ever

Southern Living Pound Cake 

My sister in law made this 
It was beautiful
And one of the BEST cakes I have ever eaten

It is a recipe from the 2006 Southern Living Magazine

It is a must try - you will definitely thank us!

Cake 
1 1/2 cup butter, softened
1 - 8 oz. package of cream cheese softened
3 cups of sugar
6 large eggs
3 cups all-purpose flour
1/8 tsp salt
1 tbsp vanilla extract

Beat butter and cream cheese at medium speed with an electric mixer until creamy.  Gradually add sugar, beat until light and fluffy.  Add eggs, 1 at a time, beating just until blended after each addition.

Combine flour and salt gradually add to butter mixture, beating at low speed just until blended.  Stir in vanilla.  Spoon batter into a greased and floured 10 inch tube pan.  (bundt)

Bake at 300 degrees for 1 hour and 45 minutes - until a long wooden pick inserted in center comes out clean.  Cool in pan or wire rack for 15 minutes.  Remove from pan and let cool completely.

Snowy White Glaze
Stir together - 1, 16 oz. powdered sugar, 5 tbsp milk, and 2 tsp vanilla extract until smooth - spoon evenly over top of cake.

I can't guarantee it will be as beautiful as my sis in laws - but it will be one of the yummiest cake you have ever eaten - promise!

Pepperoni Pasta Salad 




Easy Week Night Dinner

2 packages of Cheese Tortellini 
(I used Trader Joe brand)
1 Red or Green Pepper cut up
1 package of Turkey Pepperoni
1/2 Cup Farmer Boy Salad Dressing
Parmesan Cheese (hand full) 

Boil the pasta/drain
allow the pasta to cool
add all the other ingredients
toss together


Serve with a smile :)

Steve and Sav went to a livestock auction on Saturday

She is a "mini" pig - no idea what that means
The first day outside, her leash came off her neck
Sav and I were home alone
We ran around for a good 20 minutes
Finally caught her with a fishing net

Tex-Mex Crock Pot Cooking 



Simple easy meal!
Perfect for week nights.
And because Mexican is the best food ever - win/win.

Put the below ingredients in your crock pot on low and let it cook for about 6 hours.  

3 chicken breast
2 cups of low sodium chicken broth 
1 can of black beans (drain)
1 can of corn (drain) 
1/2 jar of salsa

When mixture is finished cooking, shred the chicken with a fork and add one cup of low fat sour cream.  

Serve over rice!
(serves 4)
