Summer Salad

If your looking for a good summer side dish, I have one for you.  

Mexican Corn Salad

  • 6 ears of corn
  • 2 tablespoons salt
  • 1 tablespoon vegetable oil
  • 1 large or 2 small fresh jalapeno peppers (optional)
  • ½ cup canned black beans, washed and drained
  • 4-6 scallions (1/2 cup), sliced both tops and bottoms
  • ½ cup chopped sweet red bell pepper
  • 2 tablespoons chopped fresh cilantro
  • Juice from one lime
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ½ cup mayonnaise (I used fat free)
  • 8 ounces Farmer’s cheese Queso Blanco
  • salt and pepper
1.  Boil the corn and then cut from cob
2.  In frying pan heat the veggie oil and then add the jalapenos, sweet red bell pepper and scallions until soft.
 3.  Add the corn, black beans and all other ingredients except the mayo.
4.  Turn heat down and let simmer for about 30 minutes.
5.  Remove from heat and let sit about 10 minutes.
6.  Add the mayo and stir very gently.
7.  Refrigerate for at least an hour and then serve.

My Mom!

This mothers day weekend I would like to brag on my mom
She has always been there for me 100%
Family meals were always important
My sister and I always came first 
She is an awesome grandma
She's a beautiful momma inside and out

Chicago Girls Trip

Sav and I took a girls trip to Chicago
Her senior year spring break
It was a surprise trip 
She found out the day before
Easter Sunday
The Easter Bunny delivered the news
She packed Easter Night
And we Flew out the next day
The weather was perfect and so was the trip
Millennium Park
The Bean
The Navy Pier
Cubs Game (100th anniversary game at Wrigley Field)
Sky Deck
Shopping shopping shopping 
Awesome pizza
And the best part it was just the two of us
Memories of a lifetime
Love my sweet girl to the moon and back

Easy Week Night Dinner

I love to cook but I'm always up for something 
quick and yummy
This is truly delicious

1 Sam's Club Rotisserie Chicken
(well you can get it anywhere but Sam's 
is $4.99 huge and yummy)
1 Box of Couscous
Lemon Zest
Pepper

I make the Couscous according to the directions on the box
Cut up some of the chicken and add to the Couscous
Grate the zest of about 1/2 of a lemon
Add some pepper.



Enjoy.
