Chicken Pot Pie 



This is my all time favorite
comfort food
food to share with others
have probably delivered this meal 10 times just this year
family and friends 
sickness, babies and just because.

I love comforting people with food.
and hugs but we are talking food here.


2 packages of deep dish pie crust
1 large can of light cream of chicken soup
1 small can of low sodium chicken broth
1 rotisserie chicken - I get mine from Sam's Club
1 can green peas
1 can of corn
1 can of potatoes
1 can of carrots (unless I'm making for my picky dad)
2 cups of cheddar cheese
1/2 cup fat free milk 
salt and pepper

De-bone the chicken
Throw it in a mixing bowl
Drain all the vegetables 
Mix all ingredients with the chicken

Divide the mixture in half
Pour half in one pie shell - cover with the second piece of dough
Pour the other half in the second pie shell - cover with the second piece of dough

Bake on 350 for about 45 minutes

Just that easy!

Oreo Birthday Cake, Cake Balls

This is a quick and easy
fun recipe for a summer party
or just to eat 

1 package of birthday cake oreos
1 package of 8 oz cream cheese
1 package of melting chocolate
sprinkles

Put the oreos in a zip lock bag and crush - really really crush.
Put them in the mixer with the cream cheese.
(let the cream cheese soften a little first)
mix together.
I used a cookie scooper and put them on wax paper and then 
put them in the freezer for about 10-15 minutes until firm.
Melt the white chocolate 
Dip the cake balls in the white chocolate 
Add sprinkles of course
Put back in the refrigerator until ready to serve.

Your guest will thank you - or your family, whichever the case may be.

You will definitely thank me for this recipe.
Or maybe not. 

Oreo Cheesecake Cupcakes

Ingredients

22 oreos - 16 left whole 6 chopped
2 8oz packages of cream cheese, at room temperature
1/2 cup sugar
1/2 tsp vanilla extract
2 large eggs, room temperature, lightly beaten
1/2 cup sour cream 
pinch of salt

prep time: 20 minutes
cook/cool time:  25 minutes (4 hours to chill)
servings:  16

Directions

1.  Preheat oven to 275
2.  Line 16 muffin tins with liners
3.  Place 1 whole oreo in the bottom of each 
4.  In a large mixing bowl, beat the cream cheese.  Gradually beat in vanilla and sugar.
5.  Pour in the beaten eggs, a little at a time, scraping down the side of the bowl after each addition.
6.  Beat in the sour cream and salt.
7.  Stir in chopped cookies by hand.
8.  Pour the batter into the prepared tins, filling each almost to the top.
9.  Bake, rotating pan halfway through, until filling is set, 22 - 25 minutes.
10.  Cool in the pans for about 15 minutes, on a wire rack.
11.  Transfer cakes onto a plate and cool in the refrigerator for at least 4 hours.

They are simply yummy!
